Sheer Payra (Afghan Milk Fudge)

Sheer Payra is an Afghan milk fudge flavoured with nuts, rose water and cardamom. Serve with tea or coffee.
  • 250 ml (8 fl oz, 1 cup) water
  • 200 g (7 oz, 1 cup) sugar
  • 150 g (5 oz, 1½ cup) milk powder
  • 100 g (3½ oz, 1 cup) ground walnuts and almonds
  • 1 tbsp rose water
  • 1 tsp cardamom powder
  • Chopped pistachios for garnish (optional)
  1. Put the sugar and water in a pan and bring to the boil. Simmer to thicken the syrup.
  2. Remove from the heat and add the rose water, cardamom, nuts and milk powder. Mix well.
  3. Pour the hot fudge into a greased tray or dish. Sprinkle on some chopped pistachios and leave for about an hour to cool.
  4. When the fudge has gone cold cut it while still in the tray by drawing a knife through it.

Titli's Tips
The syrup should be reasonably free-flowing and clearly syrupy. The best description would be like warm honey.
