Eton Mess is a classic British dessert which combines strawberries, cream and meringue.
- 400 g (14 oz) strawberries
- 100 g (3½ oz) meringue nests
- 300 ml (10 fl oz) whipping cream
- 1 tbsp caster (superfine) sugar
- Wash and hull the strawberries, then cut them into quarters lengthways.
- Put half the strawberries in a bowl and mash coarsely with a fork or the back of a spoon.
- Beat the cream and sugar together until you get soft peaks.
- Add the mashed strawberries and their juice, and most of the unmashed strawberries - keep a few pieces back for decoration. Mix well.
- Place the mixture in the fridge to chill.
- When you are ready to serve, break the meringues into about 2 cm (1") pieces and add them to the mixture. Gently fold the meringues into the mixture. Decorate with strawberry pieces and serve.

Add the meringues to the mixture immediately before serving to ensure the meringues stay crunchy. They will go soft in less than 1 hour once they have been added. You don't have to use all the mixture at once. In the video I made this quantity last for 2 nights, adding the meringues only before serving.
You can also make this using raspberries, peaches or rhubarb!
