Blueberry Chocolate Muffins

Don't choose between blueberry or chocolate muffins - make blueberry chocolate muffins!
  • 250 g (8 oz) plain (all purpose) flour
  • 250 ml (8 fl oz) buttermilk
  • 125 g (4 oz) caster (superfine) sugar
  • 120 g (4 oz) blueberries
  • 4 tbsp vegetable oil
  • 50 g (2 oz) cocoa powder
  • 1 egg, beaten
  • 1 tbsp baking powder
  1. Sift the flour, baking powder and cocoa powder into a bowl. Add the sugar and mix well.
  2. Make a well in the centre and add the buttermilk, beaten egg and vegetable oil. Mix briskly.
  3. Fold in the blueberries making sure that all the dry ingredients are incorporated into the mixture.
  4. Divide the mixture into 12 into a muffin tin or muffin cases. Bake at 180°C/360°F fan oven, 200°C/400°F conventional oven for around 20 minutes.

Instead of buttermilk you can use a 50:50 mixture of milk and plain yoghurt.
