Fattoush

This Levantine salad has crunchy fried pita bread, fresh vegetables and citrus notes. This fattoush recipe goes great with a barbecue!
Ingredients
  • 3 Romaine lettuce leaves cut into 2cm (1") strips
  • 3 pita bread, fresh or stale
  • 1 tomato, diced
  • ½ cucumber cut into large dice.
  • ½ red onion, sliced
  • 2 radishes, sliced and diced
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • Juice of ½ lemon
  • 1 garlic clove, crushed
  • ½ tsp salt
  • 1 tsp sumac
  • ¼ tsp ground allspice
  • ¼ tsp ground black pepper
For the dressing
  • 2 tsp balsamic vinegar
  • 1½ tbsp extra-virgin olive oil
To fry the pita bread
  • 2 tbsp butter
  • 2 tbsp olive oil
Instructions
  1. Place the onion, sumac, allspice and black pepper in a bowl. Rub the mixture with you hand to coat the onions with the spices.
  2. Slice the pita breads in half and cut each half into 2 cm (¾") triangles
  3. Heat the butter and oil in a pan until the butter startes to foam. Add about half the pita triangles and fry until golden brown. Remove the bread from the pan with a slotted spoon and place on kitchen paper to drain. Repeat with the remaining pita triangles.
  4. Put the lemon juice, garlic and salt into a small bowl and mix together.
  5. Whisk together the balsamic vinegar and the extra-virgin olive oil.
  6. Place the fried bread, vegetables, and herbs into a large bowl. Pour on the lemon juice/garlic and the olive oil/balsamic vinegar and toss really well. Serve immediately.

Titli's Tips
You can simply toast or grill the bread but it is much tastier when fried.

You can adapt the ingredents to your own taste, for example you could add some chopped peppers if you feel so inclined.
