Cheese Twists

These cheese twists make a delicious hors d'oeuvre and take no time at all to make.
  • 200 g (7 oz) puff pastry
  • 3 tbsp grated parmesan cheese or other hard cheese
  • 1 tsp mixed herbs
  • 1 beaten egg
  1. Unroll/unpack the pastry and roll out to about 25cm x 20 cm (10" x 8").
  2. Cut the pastry down the middle to create two pieces 12½ cm x 20 cm (5" x 8") and brush each half with beaten egg.
  3. spread the cheese and herbs evenly over one half of the pastry.
  4. Fold the other half of the pastry egg-side down onto the first half. Roll gently to ensure the two halves seal together.
  5. Cut the pastry into 16 strips, ½" (1 cm) wide.
  6. Place the strips on a baking tray covered with buttered baking paper, twisting each strip twice as you do so. Press the ends of the strips onto the paper.
  7. Brush with beaten egg and bake at 200°C/392°F for about 10 minutes until puffed up and golden. Place on a wire rack to cool.

Titli's Tips
Any hard flavourful cheese works well for this recipe. Softer cheeses tend to ooze out and make a mess.

It helps to put the pastry on a piece of paper initially as it's easier to fold the paper with the pastry on it than it is to pick up the pastry and place it on the cheesy half.
