Um Ali

Um Ali is a Middle-Eastern (maybe Egyptian!) dessert which is very quick and easy to make. A combination of nuts, fruit, filo pastry and milk make this a truly delicious dish!
  • 4 croissants or 200 g (7 oz) cooked puff pastry
  • 500 ml (16 fl oz) milk
  • 140 g (5 oz) sugar
  • 100 g (3½ oz) unsalted pistachios
  • 100 g (3½ oz) flaked almonds
  • 100 g (3½ oz) raisins
  • 50 g (2 oz) grated coconut
  • 100 ml (3½ fl oz) crème fraiche or thick cream
  • 1 tsp cinnamon powder
  • Brown sugar for the topping
  1. Mix together the nuts, raisins, cinnamon and 2 tbsp of the sugar into a bowl. Break the croissants into the bowl and mix well. Transfer to a casserole dish.
  2. Bring the milk and 4 tbsp of sugar to the boil in a pan. Pour the hot milk into the casserole and leave for 5 minutes.
  3. Combine the crème fraiche with the remaining sugar and pour into the casserole to form a layer on the top. Sprinkle with brown sugar. Bake in an oven at 175°C for 15 minutes or until the top starts to brown.

Titli's Tips
If you can’t get unsalted pistachios, use salted pistacios and wash them in a large volume of cold water. Drain, then dry in the oven. This will remove most of the salt.
