Bruschetta with Tomato & Basil

Get yourself a taste of the Mediterranean with this bruschetta recipe which combines ciabatta, tomato, basil and olive oil!
Serves 4 as a starter or 2 as a supper
  • 8 slices of ciabatta or other Italian bread
  • 12 cherry tomatoes cut in half
  • 4 sundried tomatoes cut into strips
  • 6 large basil leaves, shredded
  • 4 tbsp olive oil
  • 2 garlic cloves, peeled
  1. Toast the ciabatta on both sides.
  2. Place the tomatoes, sundried tomatoes, basil and olive oil in a bowl. Season with salt and pepper and toss well.
  3. Cut the garlic cloves in half and rub them over both sides of the toated ciabatta.
  4. Place the ciabatta on a serving plate and spoon over the tomato and basil mixture.
