Chicken Balti

This is a straightforward, no-nonsense recipe for chicken balti that you can adapt to suit your taste.
  • 600 g (20 oz) chicken breast, cubed
  • 1 large onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 3 tbsp Balti Spice Mix
  • 3 tbsp ghee or vegetable oil
For Balti Spice Mix
  • 5 tsp garam masala
  • 4 tsp coriander powder
  • 2½ tsp gram flour (besan)
  • 2½ tsp garlic powder
  • 2 tsp cumin powder
  • 2 tsp fenugreek powder
  • 2 tsp paprika
  • 2 tsp turmeric
  • ½ tsp ground ginger
  • ½ tsp chilli powder
  • ½ tsp cinnamon powder
  • ½ tsp black pepper
  1. Heat the ghee or oil in a wok or large pan over a medium heat and stir-fry the garlic for 30 seconds.
  2. Add the onions, turn the heat down and sauté gently for about 10 minutes until the onions just start to go brown.
  3. Add in the spices and the chicken. Turn up the heat and stir-fry for about 5 minutes.
  4. Add 125 ml (4 fl oz) of water, season with salt, bring to the boil then simmer for 10 minutes or until the chicken is cooked and the gravy is nice and thick.

Titli's Tips
If the spices start to stick to the bottom of the pan when you first add them, just add a tbsp of water to loosen them from the pan.

Serve with paratha or chapatti.
