Khara Masala Balti Chicken

This is a quick and easy Balti curry which uses whole spices (khara) rather than ground spices. It’s a hot little number – reduce chilis if you want – and quite a dry curry so is best eaten with a simple raita and garlic chapati.

Ingredients
  • 500 g (1 lb) chicken, cubed
  • 1 onion, sliced
  • 1 tomato, sliced
  • 4 green chillis slit lengthways
  • 1¼ cm of shredded ginger
  • 3 garlic cloves, sliced
  • 3 curry leaves
  • 2 dried red chillis, crushed
  • ¼ tsp mustard seeds
  • ¼ tsp fennel seeds
  • ¼ tsp onion seeds
  • ¼ tsp cumin seeds
  • ¼ tsp fenugreek seeds
  • 4 tbsp vegetable oil

Instructions
  1. Heat the vegetable oil in a wok or frying pan. Add in the onions, garlic, ginger and spices and stir-fry over a medium heat for 5 minutes
  2. Add in the chillis and stir-fry for 2 more minutes.
  3. Add in the tomatoes and the chicken and stir fry for 7-10 minutes until the chicken is cooked.
  4. Serve!

Titli’s Tips
This is a stir-fry curry which gives only a little gravy. Adjust the chillis to suit your taste.
