Khara Masala Balti Chicken
This is a quick and easy Balti curry which uses whole spices (khara) rather than ground spices. It’s a hot little number – reduce chilis if you want – and quite a dry curry so is best eaten with a simple raita and garlic chapati.

Ingredients
- 500 g (1 lb) chicken, cubed
- 1 onion, sliced
- 1 tomato, sliced
- 4 green chillis slit lengthways
- 1¼ cm of shredded ginger
- 3 garlic cloves, sliced
- 3 curry leaves
- 2 dried red chillis, crushed
- ¼ tsp mustard seeds
- ¼ tsp fennel seeds
- ¼ tsp onion seeds
- ¼ tsp cumin seeds
- ¼ tsp fenugreek seeds
- 4 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a wok or frying pan. Add in the onions, garlic, ginger and spices and stir-fry over a medium heat for 5 minutes
- Add in the chillis and stir-fry for 2 more minutes.
- Add in the tomatoes and the chicken and stir fry for 7-10 minutes until the chicken is cooked.
- Serve!

This is a stir-fry curry which gives only a little gravy. Adjust the chillis to suit your taste.
