Ingredients
  • 500 g (1lb) chicken breasts, cubed
  • 400 g (14 oz) tomatoes, chopped
  • 200 g (7oz) mushrooms, thickly sliced
  • 1 large onion, chopped
  • 1 tbsp plain flour
  • 2 garlic cloves, crushed
  • 1 bay leaf
  • ½ tsp salt
  • ¼ tsp thyme
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • Chopped parsley to serve
Instructions
  1. Heat the oil to a medium heat and brown the chicken for 3-4 minutes.
  2. Add the onions and fry until the onions start to brown.
  3. Turn down the heat, add in the flour and cook for 2 minutes with stirring.
  4. Add in the garlic, herbs, tomatoes and 250 ml (1 cup) of water. Bring to the boil, cover and simmer for 15 minutes.
  5. Add in the mushrooms and simmer uncovered for another 15 minutes. Sprinkle with chopped parsley and serve.
Titli's Tips
Serve with pasta or rice if you wish, but I prefer to eat this with lightly toasted French bread.
