Cheese & Onion Pie
A very simple and very tasty recipe for Cheese & Onion Pie.
Ingredients
Makes an 8″ (20 cm) pie
500 g pastry (ready-made or see the section on Basic Techniques)
400 g onions, sliced
400 g cheese, grated
2 eggs
1 tsp mustard
Salt
Pepper
Method
| 1 | Place the onions in a pan and just cover with water. Boil gently for 10 minutes and drain. |
| 2 | Place the drained onions in a bowl. Add the mustard and season well with salt and pepper. Add in the cheese. |
| 3 | Beat the eggs and add into the mixture, reserving a little of the egg for glazing the pie. Mix well. |
| 4 | Line a pie dish with half of the pastry, making sure the pastry just comes over the edge of the dish. Pour in the cheese & onion mixture. |
| 5 | Roll out the remaining half of the pastry and place it on the top of the pie. |
| 6 | Trim, and crimp the edges with a fork to create a seal. Make some slits in the pastry to let steam out. Brush the pie with the remaining beaten egg. |
| 7 | Bake in the oven at 200°C for 30-35 minutes. |
| 8 | Allow to cool for at least 20 minutes before serving. |
Titli’s Tips
Use whatever cheese you want, but it should be at least semi-hard. Don’t try this with brie, for example!
The pie mixture is quite dry so there is no need to blind-bake the pastry beforehand. Goes well with a salad, or peas, or a nice crisp apple. There’s just something about cheese and apple…
