Beef and Bean Curry
A quick and easy meal that is low in fat and high in taste.
Ingredients
Serves 2
300 g (10 oz) good lean beef (sirloin, rump, fillet…)
150 g (5 oz) runner beans, sliced (or French beans or mangetout)
1 red onion, cut into thin wedges
1½ tbsp curry paste
Method
| 1 | Remove any excess fat from the meat and slice finely. Dry-fry in a non-stick pan for 2 minutes. Remove the meat from the pan with a slotted spoon and leave the juices behind. |
| 2 | Add the red onion and stir-fry for 2 minutes to soften. Add the curry paste and stir-fry for another minute. |
| 3 | Add in the beans, the beef and 150 ml (5 fl oz) of water and continue to cook for about 5 minutes or until the beans are tender. |
| 4 | Season with salt and pepper if desired and serve with boiled rice. |
Titli’s Tips
Don’t be tempted to use cheap cuts of meat for this recipe. You simply cannot make a good stir-fry from stewing steak!
This recipe also works very well with chicken.
