Baked Fish with Herb Crust
This dish is so simple and so tasty I can almost guarantee it will become part of your diet!
Ingredients
Serves 2 people
2 x 150 g (5 oz) fish fillets (cod, haddock, panga, salmon…)
30 g (1 oz) breadcrumbs
1 tomato, finely diced
1 tbsp fresh dill
1 tbsp fresh parsley
1 tbsp fresh coriander
1 tbsp lemon or lime juice
1 tbsp low-fat cream cheese
Method
| 1 | Mix together all the ingredients (except the fish!) in a bowl to make a thick creamy paste. |
| 2 | Line a baking tray with aluminium foil and place the fillets skin-side down in the tray. Season with salt and pepper. |
| 3 | Spoon the herb paste onto the fillets and press it down to make sure it sticks. Bake in the oven at 180°C for 20 minutes. |
Titli’s Tips
Just about any meaty fish will be great for this dish. You can change the herbs to match you own personal taste.
Serve with a few new potatoes and steamed or boiled vegetables of your choice.
